Ingredients

  • - 4 ripe bananas
  • - 1 cup of pitted dates 240 grams
  • - 1 cup of almond milk 240 ml
  • - 2 tablespoons of maple syrup 30 ml
  • - 1 teaspoon of vanilla extract 5 ml
  • - 1/2 teaspoon of cinnamon 2.5 ml
  • - 1/4 teaspoon of nutmeg 1.25 ml
  • - Pinch of salt
  • - 1 tablespoon of coconut oil for greasing (15 ml)
  • - 1/2 cup of rolled oats 120 grams

Instructions

  • Start by preheating your oven to 350°F (175°C). While it's warming, grease a baking dish with the coconut oil.
  • In a large mixing bowl, mash the bananas until you achieve a smooth consistency.
  • Chop the pitted dates finely and add them to the mashed bananas.
  • Pour in the almond milk, maple syrup, and vanilla extract into the mix. Stir well.
  • Now, sprinkle in the cinnamon, nutmeg, and a pinch of salt, mixing thoroughly.
  • Fold in the rolled oats until they're fully incorporated into the Vegan Banana and Date Pudding mixture.
  • Transfer the mixture to your greased baking dish.
  • Place the dish in the oven and bake for about 35 minutes. The top should turn golden brown, and the pudding should set.
  • Once done, remove from the oven and let it cool for a few minutes.

Notes

1. For an extra layer of texture, consider adding some chopped nuts like almonds or walnuts.
2. Always choose ripe bananas. They're naturally sweeter and blend well.
3. Using Medjool dates? They’re sweeter, so you might want to reduce the maple syrup slightly.
