Ingredients

  • Berries: 2 cups about 480 ml mixed berries (blueberries, strawberries, raspberries)
  • Coconut Milk: 1 can 400 ml
  • Chia Seeds: 3 tbsp 45 ml
  • Maple Syrup: 3 tbsp 45 ml
  • Vanilla Extract: 1 tsp 5 ml
  • Salt: A pinch
  • Lemon Zest: 1 tsp 5 ml

Instructions

  • Berry Blend: Begin by blending 1.5 cups (360 ml) of the mixed berries in a blender until smooth. Set aside the remaining half cup for garnish.
  • Mixing Time: In a mixing bowl, combine the berry blend, coconut milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt. Stir it well to ensure an even mix.
  • Refrigeration: Pour the mixture into your desired serving bowls or glasses. Cover with a cling wrap or lid, and refrigerate for a minimum of 3 hours.
  • Final Touch: Before serving, sprinkle the Vegan Berry and Coconut Pudding with the remaining berries and some lemon zest for an extra zing!

Notes

 TIPS
Consistency Matters: If your pudding is too thin after refrigeration, add more chia seeds and let it set for another hour.
Natural Sweeteners: If you desire a sweeter pudding, you can adjust the quantity of maple syrup or try adding agave nectar or date syrup.
Freshness First: Always use fresh berries for the best flavor. However, if fresh berries aren’t available, frozen ones can be a substitute but may alter the consistency.
SERVING SUGGESTIONS
Texture Game: Add some crushed nuts or granola on top of your Vegan Berry and Coconut Pudding for a delightful crunch.
A Side of Vegan Ice Cream: Complement your pudding with a scoop of vegan ice cream on the side.
Fruit Fusion: Alongside berries, you can also top with sliced bananas or kiwi for a fruitier experience.
