Hey there! I see you’re in the mood for some Cauliflower Rice Stir-Fry. Oh boy, you’re in for a treat! This is one of my all-time favorites, and I’m thrilled to share it with you. It’s the answer to the all-too-common “I want something healthy but yummy” dilemma. But enough chit-chat – let’s dive in, shall we?

Ingredients

  • Cauliflower: Grab a medium one. That’s about 600 grams or 21 ounces.
  • Carrots: 2 medium ones 120 grams / 4 ounces.
  • Bell peppers: 2 medium ones. Go colorful! 200 grams / 7 ounces
  • Onion: Just a small one 70 grams / 2.5 ounces.
  • Garlic: 2 cloves. Yep we’re going garlicky!
  • Ginger: About a tablespoon minced (15 grams).
  • Olive oil: 2 tablespoons 30 ml.
  • Soy sauce: 2 tablespoons 30 ml. Go low-sodium if you want!
  • Sriracha: Spice it up with 1 teaspoon 5 ml.
  • Green onions: For that chef-like garnish.
  • Salt and pepper: You’re the boss here!

Instructions

  • Cauliflower First: Make it look like rice. Magic!
  • Veggies: Chop them. Easy, right?
  • Flavors Begin: Sauté the flavorful stuff like onion, garlic, ginger.
  • More Veggies: In with the carrots and peppers. Colorful, huh?
  • Cauliflower Time: Stir that beauty in.
  • Make it Yummy: Sauces, salt, pepper – bam!
