Ingredients

  • 12 large shrimps peeled and deveined (about 500g)
  • 2 tablespoons olive oil 30ml
  • Salt to taste
  • Pepper to taste
  • For the Tomato Salsa:
  • 4 medium tomatoes finely chopped (about 400g)
  • ½ red onion minced (about 50g)
  • 2 cloves garlic minced
  • 1 jalapeno pepper seeds removed and minced
  • 2 tablespoons chopped fresh cilantro 30ml
  • Juice of 1 lime
  • Salt to taste

Instructions

  • Start by preparing your grill. Preheat it to medium-high heat.
  • In a bowl, toss the shrimps with olive oil, salt, and pepper until well-coated.
  • Place the shrimps on the grill and cook for about 2-3 minutes on each side, or until they turn pink and opaque.
  • While the shrimps are grilling, prepare the tomato salsa. In a mixing bowl, combine chopped tomatoes, minced red onion, garlic, jalapeno, cilantro, lime juice, and salt. Mix until well-combined.
  • Once the shrimps are cooked, remove them from the grill and let them rest for a few minutes.
  • Serve the grilled shrimps on a plate with a generous amount of tomato salsa on the side.

Notes

For added flavor, marinate the shrimps in a mixture of olive oil, lime juice, and some crushed garlic for at least 30 minutes before grilling.
Always opt for fresh shrimps rather than frozen for a richer taste.
You can adjust the heat in your tomato salsa by adding or reducing the amount of jalapeno.
Grilled Shrimp with Tomato Salsa pairs beautifully with a side of grilled vegetables or a fresh green salad.
Consider serving it on a bed of brown rice or quinoa to make it a more hearty meal.
A chilled glass of lemon iced tea or a sparkling water can elevate the entire dining experience.
