Ingredients

  • Bread slices: 4 large, thick slices
  • Eggs: 2 large approx. 60 grams each
  • Milk: 1 cup approx. 240 ml
  • Vanilla extract: 1 tsp approx. 5 ml
  • Peanut butter: 4 tbsp approx. 60 grams
  • Chocolate chips: 1/2 cup approx. 90 grams
  • Cinnamon powder: 1/2 tsp approx. 1.3 grams
  • Salt: A pinch
  • Butter: 2 tbsp for frying, approx. 28 grams

Instructions

  • Start by cracking the eggs into a mixing bowl.
  • Add milk, vanilla extract, cinnamon powder, and a pinch of salt.
  • Whisk the mixture until smooth and well-combined.
  • Heat a skillet or pan over medium heat and melt 1 tbsp of butter.
  • While the pan is heating, spread a generous layer of peanut butter onto one side of each bread slice.
  • Sprinkle some chocolate chips over the peanut butter layer of two slices.
  • Place the other slices, peanut butter side down, onto the slices with chocolate chips, forming sandwiches.
  • Carefully dip each sandwich into the egg mixture, ensuring both sides are coated but not soggy.
  • Once the butter is melted and bubbly, place the sandwiches onto the pan.
  • Cook each side for 2-3 minutes or until golden brown, adding the remaining butter as needed.
  • Once both sides are crispy and golden, your Peanut Butter Chocolate Chip French Toast is ready to be served!

Notes

For an extra layer of flavor, you can add a dash of nutmeg or cocoa powder to the egg mixture.
Always opt for thick bread slices to avoid your Peanut Butter Chocolate Chip French Toast from becoming too soggy.
If you’re looking for a lower calorie option, consider using whole grain bread and sugar-free chocolate chips.
Make sure the pan is at the right temperature before adding your sandwiches. Too hot, and they might burn. Too cold, and they’ll take too long to cook.
