Ingredients

  • Sweet Potatoes: 4 large about 2 pounds or 907 grams
  • Unsalted Butter: ½ cup or 115 grams
  • Eggs: 2 large
  • Brown Sugar: ½ cup or 100 grams
  • Vanilla Extract: 1 teaspoon or 5 ml
  • Milk: ⅓ cup or 80 ml
  • Salt: ½ teaspoon
  • TOPPING:
  • Chopped Pecans: 1 cup or 110 grams
  • Brown Sugar: 1 cup or 200 grams
  • All-purpose Flour: ½ cup or 65 grams
  • Unsalted Butter melted: ⅓ cup (or 75 grams)

Instructions

  • Initial Prep: Start by preheating your oven to 375°F (190°C). Grease your casserole dish.
  • Tender Sweet Potatoes: Boil the sweet potatoes until tender, roughly for 20 minutes. Once done, drain and let them cool.
  • Mix Time: In a large bowl, mash the sweet potatoes. Mix in the melted butter, brown sugar, vanilla extract, eggs, milk, and salt until it’s smooth and well combined.
  • Lay it Down: Transfer your sweet potato mixture into your greased casserole dish, spreading evenly.
  • Topping: In a separate bowl, combine the chopped pecans, brown sugar, flour, and melted butter. Sprinkle this mixture generously over the sweet potato layer.
  • Bake it Up: Slide the casserole into your preheated oven and bake for 30 minutes or until the topping is golden brown.

Notes

Choose Right: Opt for firm sweet potatoes. They should have smooth skin without any wrinkles.
Storage: If you’re prepping in advance, refrigerate your Sweet Potato Casserole mix without the topping. Add the topping just before baking.
Variations: Feeling adventurous? You can add cinnamon or nutmeg for a spicy kick!
