Instructions

1. Preheat your oven to 180°C (350°F).
2. Wash the baby beetroot thoroughly. Wrap each beetroot in foil and place on a baking tray.
3. Roast the beetroot in the preheated oven for 30 minutes or until tender.
4. While the beetroot is roasting, rinse the lentils under cold water.
5. In a saucepan, bring 2 cups of water to a boil. Add lentils, reduce heat and simmer for 15-20 minutes until lentils are tender but still have a bit of bite.
6. Drain the lentils and set aside to cool.
7. For the dressing, whisk together olive oil, balsamic vinegar, honey, salt and pepper in a small bowl.
8. Slice the red onion thinly.
9. Once the beetroot is roasted, let it cool enough to handle. Then peel off the skin and slice into halves.
10. In a salad bowl, combine rocket leaves, cooled lentils, sliced beetroot, and red onion.
11. Crumble the feta over the top of the salad.
12. Drizzle the dressing over the salad and toss gently to combine.

1. For a bit of crunch, you can add some toasted walnuts or almond slivers to the salad.
2. You can substitute baby beetroot with regular beetroot, but remember to adjust the roasting time accordingly.
