Silver beet and roasted vegetable salad

– 3 tablespoons of olive oil (45 ml)
– Salt and pepper to taste
– Lemon juice from one lemon (approx. 2 tablespoons or 30 ml)
– 2 tablespoons of balsamic vinegar (30 ml)

1. Preheat your oven to 400F (200C).
2. Rinse and chop the silver beet into bite-sized pieces.
3. Peel and slice the carrots into thin rounds.
4. Chop the red onion, bell peppers, and zucchini into chunky pieces.
5. Peel and finely chop the garlic cloves.
