Silver beet, feta and mint tart

– 6 large leaves of silver beet (Swiss chard)
– 200g (7oz) of feta cheese
– A handful of fresh mint leaves
– 4 large eggs
– 150ml (5fl oz) of single cream
– Salt and freshly ground black pepper to taste
– 1 roll of ready-made puff pastry
– A little flour for dusting

1. Preheat your oven to 180°C (350°F).

3. Line a 9-inch tart tin with the rolled pastry, trim the edges and prick the base with a fork.
4. Blanch the silver beet leaves in boiling water for 2 minutes, then drain and squeeze out the excess water.
5. In a bowl, beat the eggs and mix in the cream. Season with salt and freshly ground black pepper.
6. Crumble the feta cheese into the egg mixture.
7. Chop the mint leaves finely and add them to the mixture.
8. Spread the blanched silver beet leaves evenly on the pastry base.
9. Pour the egg, feta, and mint mixture over the silver beet.
10. Bake the tart in the preheated oven for about 45 minutes, or until the filling is set and the top is golden brown.


1. Ensure the silver beet is thoroughly drained to prevent the tart from becoming soggy.
2. You can substitute silver beet with spinach if it’s not readily available.
3. If you prefer a crustless tart, simply omit the puff pastry.
